I could probably max out this entire forum's bandwidth with one reply in this topic, but I'll keep to only mentioning newer or more obscure titles that I'm interested in that could easily be overlooked by others. Here's one anime I've recently been getting into:
Outlaw Star
This show has been around forever, but the release of the complete series in one DVD box set last year has been bringing a lot of people back into it, myself included. Sometimes described as "Cowboy Bebop meets Rurouni Kenshin", the show features a very interesting blend of space-age science fiction and classic martial arts battles with archaic weaponry straight out of the samurai era. There's even a little bit of a neo-wild west theme present at certain points ala Trigun.
The series' biggest appeal is undoubtedly its characters, which at first seem to have been conceived inside the molds of some very basic archetypes, but actually feature quite interesting and unique personalities and backstories which are brought into focus as the series progresses. The writing is sharp as well, and features an excellent balance of action and mystery with plenty of lighthearted humor that seldom fails to deliver a laugh. And if it's of any interest to you, there's even a touch of romance thrown in for good measure (though the mushy stuff thankfully takes center stage only very briefly).
Outlaw Star is definitely "light watching" compared to a lot of anime series in the sci-fi/action genre from that era, but the plotlines are still complex enough to keep you interested, and at times the action can get extremely intense. The most pervasive theme in the series, however, usually ends up being its quirky, character-driven humor, which is a nice departure from all the super-serious sci-fi anime series out there. Outlaw Star really excels at hitting that ideal balance between playful wackiness, hard-hitting action, and tense emotional moments, which makes for a very enjoyable and satisfying viewing experience.
Overall, Outlaw Star is a somewhat dated yet still incredibly solid anime series that I highly recommend to anyone who missed it during its initial run on US television, especially since you can snag all 26 episodes in one set for under $40.
