FMA, Trigun, Cowboy Bebop, Paranoia Agent, Big O. I haven't really checked any others out as of late. I remember Outlaw Star being pretty awesome, but I was too young to remember any of it.

I watched the first episode. I'll get around to the rest sooner or later. And the manga, too, even though the new anime is a LOT closer to that than FMA1.

That's all I remember right now.

I've watched Azumanga Daioh, InuYasha, and Love Hina. I'm fairly certain I must have watched some others too but I don't really recall taking a large interest. I wouldn't want to say "these are the best!" having watched far too little to be an appropriate judge. I enjoy what I watched, though.
